They're basically just the filling of a delicious apple pie - sweet, tender apples in a warm cinnamon sauce. Once in a while, I crave them, and a few weeks ago I decided that I'd try to make a batch! Turns out they're super simple to make at home. A yummy mix of cinnamon, nutmeg, brown sugar, a little salt, and a good squeeze of lemon juice makes these the perfect topping for oatmeal, pancakes, waffles, or just to enjoy with a scoop of ice cream. Grilled pineapple is a serious dessert hack! Throwing the fruit on the grill amps up the sweetness, and the warm, caramelized edges are so delicious. Serving this simple grilled fruit with a scoop of coconut ice cream makes the easiest decadent dessert ever. The mix of warm fruit and creamy coconut ice cream is tropical heaven. The best part about this dessert is that it's completely plant-based! I'm enjoying the option of dairy-free ice cream lately, and my tummy couldn't be more happy.

It's delicious warm out of the oven, the next day...(if it lasts that long), and even with a scoop of ice cream on top. This recipe is unbelievably easy – all you've got to do is measure-and-dump. Ch-ch-ch-chia :) I know you've heard me rave about chia seeds since forever, but rightfully so! They are an absolute nutritional powerhouse - an excellent source of omega-3 fatty acids, antioxidants, magnesium, zinc, iron, protein, and calcium. The craziest thing about itty bitty chia seeds is that they are FULL of fiber. Just one oz of chia seeds contains 10 grams of fiber. Why is this important? Because they have the ability to soak up 27 times their weight in liquid and bloat up! They form a thick gel that can be used in tons of recipes.

 

Chia Seed Pudding sets up in about 4 hours, so this is a great idea for overnight prep. You can keep the pudding in the fridge for 3 days. If you love the texture of rice or tapioca pudding, you'll love chia pudding!

Ok, I think we can all agree that everything...everything is better with bacon. Crisp, salty, fatty delicious bacon. BBQ season is here and grilling fruit is definitely one of my favorite ways to celebrate summer. The caramelization of the fruit is really delicious with the flavor of the bacon, and adding a simple reduced balsamic vinegar makes this the easiest appetizer ever. I am soo excited for this week's recipe. Yogurt is one of my favorite snacks, and adding fresh, seasonal fruit and granola to it is simple and delicious. Nonfat plain yogurt is a great source of calcium, protein, and probiotics. Adding your own fruit cuts down on excess sugar that comes with fruit-on-the-bottom yogurt from the grocery store. I love using Driscolls's #FinestBerries and Nature's Path Organic Pumpkin Flax Seed Granola in mine :) 

With summer heating up, Frozen Yogurt Bark is a fun alternative snack for your family. It takes minutes to put together, and once it's frozen, all you've gotta do is break up the yogurt into pieces of 'bark'! This recipe is a great activity for kids to get involved in the kitchen. I love its adaptability - Frozen Yogurt Bark can be made with any combination of fruit and granola, and can be doctored up with extras like chocolate, flax seeds, chia seeds, protein powder, maca powder...the options  are endless. I love recipes that can hide nutrition boosters but still taste great!

This is a protein-packed version of good ole fried rice that is the easiest way to use up leftovers in the fridge! Fried rice is a one of my favorite indulgences - there's something so easy and lazy about it. A one-stop-shop that has carbs, protein, and veggies all in one. I've been trying to cut down on carbs (lol so hard) and switching out rice with quinoa is the perfect for doing this. You can probably tell from the influx of quinoa recipes on the blog lately lol! 

I regularly make a variation of this dish every week, depending on whatever I've got in the fridge. Pan-fried tofu and quinoa are the mainstays; anything else is just a bonus! I love tossing in fresh broccoli, onions, and carrots, but you can use frozen veggies, chicken, shrimp, even leftover steak. The options are endless! I love using plum sauce as a little twist in my stir-fries. It's a viscous, light brown sweet and tangy sauce that is amazing with fried tofu, chicken, pork, etc. A mix of fresh ginger, oyster sauce, and plum sauce makes a wonderful sauce that clings to all the great ingredients in this dish. I'm addicteddddd to the combo of sweet mango and creamy avocado!! Mangoes have been ridiculously cheap and available lately and it's been such a fun addition to my meals. This recipe is one of my favorite flavor combos! I love using avocados to sub for dressing or other fats. The mixture of ripe mango and avocado with the awesome texture of quinoa is so delicious. Use the base of this recipe as inspiration for other meals! I routinely mix mango, avo, and quinoa with all my salads, and top them with baked fish. Squeeze a whole bunch of lemon juice over top, or serve it with the lime vinaigrette I'm showing you today! :)

These flavors are vibrant. Tossing mango and avocado together brings out all the juiciness of the fruit, and the creamy avocado coats all the other ingredients. Adding in a bit of red onion for bite, cilantro for brightness, and tart cherry tomatoes (or try sweet strawberries!) makes this salad incredibly flavorful and hearty. This would be great with grilled chicken, fish, or even as a dip with chips :) This salad's so easy. Chop up all the ingredients and toss em together. Let's get cookin!

Yogurt has tons of health benefits, including a hefty dose of animal protein, calcium, vitamin B-2, B-12, potassium, and magnesium. Whenever you hear about yogurt, you hear about probiotics. Probiotics are friendly bacteria that are naturally present in the digestive system. Eating yogurt regularly helps to regulate the digestive system, and making yogurt bowls at home is a really great way to cut down on unnecessary sugar that can come with pre-made fruit-on-the-bottom yogurt cups. Plus, they're simple to make, since you can use whatever you've got at home! Use your favorite seasonal fruit and granola in a hurry, or add in fun twists like toasted coconut, chia seeds, maca powder, or other nutritional boosts.
