Vibrant Citrus Beet Salad

Vibrant Citrus Beet Salad

This month's @missbish #MISSDISH is the quickest salad ever and will turn even the most stubborn eater into a beet lover! Refreshing citrus (use oranges, mandarin oranges, blood oranges, or my favorite, Cara Cara oranges!), beets, and whatever you've got in the fridge! Never worked with beets before? No worries, use canned! Nowadays supermarkets also carry pre-roasted in the refrigerated section. I love them chopped up and tossed into my salads.

There's no blueprint to this - use what you've got! This salad has a base of citrus and beets, and can be tossed with other root veggies like carrots, butternut squash, fennel, or even brussels! Throw in leftover feta or goat cheese and use your favorite dressing - a dash of balsamic vinegar, citrus vinaigrette, or even poppyseed dressing. I love to throw a few spoonfuls of quinoa in all my salads (Cook up a huge batch on Sunday night!) Beef up the salad by serving it all on a bed of greens. Avocado is obviously a perfect addition :) Let's get cookin!

What You Need:

  • 1 orange (can of mandarin, blood, Cara Cara, whatever you've got)
  • 4 small or 1 large beet
  • salt and pepper

Other Ideas:

  • feta or goat cheese
  • quinoa
  • fennel, thinly sliced
  • red onion, thinly sliced
  • bed of greens
  • sunflower seeds, pine nuts, etc.
  • avocado
  • grapefruit
  • carrots, butternut squash, brussels sprouts
  • parsley, cilantro, or mint depending on your preference

Dressing Ideas:

  • mustard vinaigrette
  • balsamic vinegar
  • citrus vinaigrette
  • poppyseed dressing

What To Do:

  • Salad presentation does not have to be glamourous. For this salad, simply chop up all your ingredients and toss them together!

I love the vibrant color of all the ingredients in this salad. It makes for a beautiful Spring/Summer meal. You eat with your eyes first! The contrasting colors and shapes are really gorgeous together - I love slicing up the oranges and beets and layering them on a plate - it makes such a statement!

Quick Tip: Cook up a huge batch of quinoa on Sunday night and keep it in the fridge! This makes lunches and dinners super easy. Cook up some protein? Eat it with quinoa. Munching on a salad? Toss some quinoa in it and boost the nutritional value! :)…

Beets aren't just pretty, they are a great source of dietary fiber, iron, vitamin B6, vitamin C, and magnesium! They also turn everything a gorgeous pink hue :) Hope you give it a try when you're looking for something nice and light! xoxo
