Garlicky, cheesy bread is pretty undeniable. Cauliflower crust is one of the most surprisingly delicious low carb, gluten free substitutes for bread. The cauli crust comes out fluffy and flavorful, and will wow your family - they won't know the difference :) I love dipping these cheesy breadsticks into marinara. Seriously so satisfying!
Growing up, I've gotta admit that I really loved Fig Newtons. But, raise your hand if you've actually never had a fresh fig before! I didn't try the actual fruit until fairly recently. I fell in love with their rich, earthy flavor... sweet, with a slightly chewy texture. They're so simple to eat. You can slice them up and eat with with yogurt or açai, throw some pieces onto a cheese board, or add them to pizza or flatbread with some burrata. Today's recipe is a fast, elegant appetizer that takes minutes to put together.
This is a bright and zesty recipe to enjoy some of summer's best produce!! It can be enjoyed with chips as a dip, or eaten as a summer salad. Golden brown kernels of corn come together with tomatoes, creamy avocado, red onion for bite, black beans, and tons of fresh cilantro in minutes, and are tossed with the most amazing Honey Lime Vinaigrette. This combo is seriously delicious - the combination of lime juice, earthy, warm cumin, honey, and extra virgin olive oil is the absolute perfect way to bind these ingredients together. The best part is that the flavor of the dip gets better as it sits - so it's great to have out during an event, or to make ahead for lunch! Let's get cookin!
Ok, I think we can all agree that everything...everything is better with bacon. Crisp, salty, fatty delicious bacon. BBQ season is here and grilling fruit is definitely one of my favorite ways to celebrate summer. The caramelization of the fruit is really delicious with the flavor of the bacon, and adding a simple reduced balsamic vinegar makes this the easiest appetizer ever. Finish the peaches off with fresh sprigs of mint for a flavor explosion in your mouth. Serious good eats. Watch my newest video recipe below! :) Let's get cookin!
I'm addicteddddd to the combo of sweet mango and creamy avocado!! Mangoes have been ridiculously cheap and available lately and it's been such a fun addition to my meals. This recipe is one of my favorite flavor combos! I love using avocados to sub for dressing or other fats. The mixture of ripe mango and avocado with the awesome texture of quinoa is so delicious. Use the base of this recipe as inspiration for other meals! I routinely mix mango, avo, and quinoa with all my salads, and top them with baked fish. Squeeze a whole bunch of lemon juice over top, or serve it with the lime vinaigrette I'm showing you today! :)
These flavors are vibrant. Tossing mango and avocado together brings out all the juiciness of the fruit, and the creamy avocado coats all the other ingredients. Adding in a bit of red onion for bite, cilantro for brightness, and tart cherry tomatoes (or try sweet strawberries!) makes this salad incredibly flavorful and hearty. This would be great with grilled chicken, fish, or even as a dip with chips :) This salad's so easy. Chop up all the ingredients and toss em together. Let's get cookin!
Pasta salad is perfect for Springtime! This recipe is an easy and delicious way to stretch out fresh seafood. Tender orzo pasta, roasted salmon, cherry tomatoes, asparagus, and salty feta are tossed with a zesty citrus dressing for a beautifully hearty salad. There's something about the texture of orzo pasta that makes me crave it all the time! This Spring salad is great for emptying the fridge - don't have asparagus? Use peas, spinach, or beans! Sub shrimp for salmon or leftover chicken and feel free to use Parmesan instead of Feta :) If you're cutting carbs, toss all these ingredients with crispy Romaine or kale.
For a little fizzy twist on the classic margarita, the Paloma is the perfect cocktail. My girlfriend Kayla introduced me to this grapefruit and tequila cocktail on an afternoon where we turned Happy Hour into a $100 outing. Needless to say, I've been ordering them ever since. The Paloma is a refreshing combination of sweet and tart grapefruit juice or soda, lime, and a nice salty rim. Top off this 5 minute cocktail with club soda for a bubbly finish. I love using fresh squeezed grapefruit juice, but you can also use Squirt or Grapefruit Jarritos! :) Let's get drankin!
You can never have enough chicken recipes in your arsenal! Anyone who knows me, knows I'm not too big on spicy food. But I love this recipe! Smoky, spiced chicken thighs are grilled and topped off with a bright, fresh sauce made of parsley, lime juice, jalapeño, and a drizzle of half-and-half for a little body. Both the spice rub and the herb sauce take minutes to whip up, so this is a great option for weeknights! Let's get cookin!
There's nothing like a classic grilled cheese. And I think we can all agree that we've been waiting on a taco emoji since forever. So what happens when you combine the two? Pure heaven. This week's recipe for Grilled Cheese Tacos is an incredibly easy way to appease your biggest junk food craving in minutes. Toss together some fresh pico de gallo and slice up some creamy avocado to top it all off. These tacos are perfectly warm and gooey, salty and savory; and the pico adds a nice fresh punch. Let's get cookin :)
Cheese. I think it's safe to say that for some, cheese is its own food group! Cheddar, Gruyere, Jack, Parmesan, Cotija, Brie, Fontina, Feta, Mozzarella...the options are deliciously endless. One of my favorites is Halloumi, which is a semi-soft, brined cheese made from a mixture of goat's and sheep's milk. Because of its high melting point, it can easily be fried or grilled. Grilled cheese.
Halloumi is salty, and really wonderful when paired with mint. It's nice to eat during the warm months. The flavor of the cheese is perfect with fruit like grapes, watermelon, figs, and strawberries. Today's recipe is a surprising mixture of flavors that really play off each other and create a fun dish where spicy meets sweet and salty. This would be beautiful when served at brunch or as an appetizer . The macerated strawberries get a little kick from Serrano pepper, and fresh mint and cilantro top it all off. Let's get cookin :)
