Ch-ch-ch-chia :) I know you've heard me rave about chia seeds since forever, but rightfully so! They are an absolute nutritional powerhouse - an excellent source of omega-3 fatty acids, antioxidants, magnesium, zinc, iron, protein, and calcium. The craziest thing about itty bitty chia seeds is that they are FULL of fiber. Just one oz of chia seeds contains 10 grams of fiber. Why is this important? Because they have the ability to soak up 27 times their weight in liquid and bloat up! They form a thick gel that can be used in tons of recipes. The beauty of Chia Seed Pudding is endless - it is seriously so easy to make, and even easier to customize into different flavors. Chia Pudding is essentially your favorite liquid/milk, chia seeds, and whatever flavoring you'd like to add. Once you have the ratio down, it's all about the add-ins. One cup liquid to 4 tbsp chia seeds.

Today's recipe is for Mint Chocolate Chia Pudding, but some fantastic ideas are: Chocolate Peanut Butter, Coconut (use coconut milk), Chocolate Raspberry, Banana, Vanilla, Lemon Raspberry, and Coffee. 

Chia Seed Pudding sets up in about 4 hours, so this is a great idea for overnight prep. You can keep the pudding in the fridge for 3 days. If you love the texture of rice or tapioca pudding, you'll love chia pudding! Let's get cookin!

What You Need: 

Mint Chocolate Chia Seed Pudding

  • 1 cup milk (coconut, almond, soy, rice, regular)
  • 4 tbsp chia seeds 
  • 2-3 tbsp raw organic honey
  • 2 tbsp unsweetened cocoa powder 
  • 1/4 tsp mint extract

Optional Garnish:

  • Fresh mint
  • Chocolate shavings

What To Do:

  • Whisk together 2 tbsp unsweetened cocoa powder and 1 cup milk. Stir in 4 tbsp chia seeds, 2-3 tbsp honey to taste, and 1/4 tsp mint extract. Incorporate well, and throw it in the fridge for at least 4 hours! That's it :)

The pudding is delicious when served with fresh mint and chocolate shavings.

I have to admit that I caramelized some banana slices and ate it with this pudding. It was insane how decadent it tasted - like a super rich dessert that would definitely make you feel guilty. Except for the fact that it wasn't! The pudding is naturally sweetened, and you can switch it up by using whatever milk or liquid you'd like. It's easy to make a really delicious Coconut Chia Seed Pudding by using coconut milk. So good with fresh fruit on top. Speaking of which, I made some plain Vanilla Pudding too!

Plain Chia Seed Pudding

  • 1 cup of your favorite milk 
  • 4 tbsp chia seeds
  • 2-3 tbsp raw organic honey
