During the week, I like to eat lighter meals. It’s great to have an arsenal of simple, reliable recipes that you can tweak and put your twist on. This classic recipe uses Dover sole, a flatfish that is prized for its mild, buttery, sweet flavor and versatility. The classic recipe coats the fish in seasoned flour, but I’ve added another step to give it a little more crispiness. Butter and lemon enhance the natural taste and texture of the fish. If you don’t happen to eat pork, try this delicious marinade on chicken! This marinade works best overnight, so a quick tip is to throw it together while you’re cooking dinner the previous night and throw it in the fridge. Homemade Fruit Roll-Ups
This month’s #MISSDISH is a fun one. Growing up, fruit roll-ups and fruit snacks were some of my favorite snacks at lunchtime. One pack was never enough, and I always saved the strawberry ones for last. Over the years I’ve learned about what types of ingredients make these type of snacks so yummy. Tons of sugar, corn syrup, and other GMOs. One roll of Fruit by the Foot contains 2 tsp of sugar. Often fruit roll-ups don’t even contain real fruit. I decided to experiment with different ways to make snacks that were just as delicious but much more health conscious.
Making homemade fruit roll-ups is way easier than you think. You can use this recipe with any fruit! It’s delicious with strawberries, mango, any blend of berries, even apples and watermelon. With two organic ingredients, you know exactly what’s going into these snacks. These are great for everyone in the family - perfect for kids and great to pack for work. Let’s get cookin!
PMP Summer Salad (Grilled Peach, Melon & Prosciutto)
Prosciutto & melon is one of the most glorious classic flavor combinations ever. The perfect blend of sweet and salty, refreshing and savory…not to mention so easy to throw together. These little BFF’s are usually served as a delicate piece of prosciutto wrapped around a ripe piece of cantaloupe. This beautiful salad steps it up a bit without being super pretentious. Peppery arugula serves as the base, but you can totally use whatever greens you’ve got in the fridge. Grilling fruit is such a great way to elevate any dish. It brings out the natural sugars in the fruit and makes everything taste even more vibrant. A mix of sweet melon balls, creamy mozzarella, grilled peaches, thin, salty prosciutto, a bite from slivers of raw red onion, sea salt & a crack of black pepper make the most delicious summer salad. Spiked Freckled Lemonade
Fourth of July is just around the corner! I’ve never made lemonade before because I was honestly kind of confused - is lemonade just hella lemons and water? How many lemons would you need to fill an entire pitcher? I feel like it would take a ton of lemons to make some good lemonade. But then I experimented in the kitchen and can now share with you that making lemonade is super easy and in fact, is a ton of water! This recipe is really perfect for summer - the base is just a really, really delicious lemonade. But I’ll show you how adding pureed strawberries can make the most refreshing Freckled Lemonade ever. And as usual, you can spike it with booze if you choose :)
Watermelon Feta Salad
I’ve teamed up with the ladies over at MISSBISH for their #MISSDISH series! I’ll be sharing delicious, easy, and healthy recipes on their blog every month :) With that said, it’s officially summer! It’s hella hot outside, and one of my favorite things to make on a hot day is a refreshing Watermelon Feta Salad! Don’t get it twisted, you don’t have to do the crazy grid presentation to enjoy this, but it’s a really fun option for entertaining. This recipe is super easy to throw together and is gorgeous when tossed together in a bowl. There’s something so refreshing about cold, ripe watermelon that’s sprinkled with just a touch of salt, mixed with salty feta, cool cucumber and melon, and creamy avocado. Thin slivers of red onion give the salad a little bite, and fresh mint brings the perfect brightness. A lil drizzle of good balsamic vinegar is all you need to bring it together. Simple, delicious, perfect for summer!
Watermelon Margaritas
It’s watermelon season! Watermelon is available year round, but its peak season is May through August. Watermelon is one of my favorite fruits! It has a ton of nutritional benefits, such as a significant source of the antioxidants beta-carotene and vitamin C. It contains lycopene, and is composed of 92% water, making it great for snacking on during warm weather since it helps to keep you hydrated.
Watermelon is soo versatile! You can make smoothies, salsas, sorbets, salads, on its own with lime and salt, or into a refreshing cocktail! This margarita is a crowd pleaser - the perfect mix of sweet and tart - with a good amount of booze that’ll get your party goin.
Chicken Thighs and Brussels Sprouts with Mustard Sauce
Simple, tasty weeknight dinners are so clutch! This one takes minimal prep, uses a bunch of ingredients you already have in the fridge, and yields the tastiest meal. Tender, juicy chicken thighs and crisp Brussels are glazed in a tangy, savory sauce that takes minutes to come together. Let’s get cookin :)
The Best $5 Cocktail Ever
This is my one of my favorite hacks for entertaining. When throwing a party or even showing up to a potluck, a large part of the budget is generally dedicated to booze. Well, at least at any party I’d like to be at :) For large groups of people, it can get expensive to get a buzz going. I have the perfect cocktail.
This cocktail was a happy accident that came about from me experimenting with ways to doctor up cheap red wine. There are no tricks here - it’s wine & Orangina - a French Monkey! It’s the easiest little drink to throw together and tastes just like sangria with a little fizz. It’s super refreshing and you can even add fruit to it if you like! There’s not much to it - and when a bottle of wine and a large bottle of Orangina are basically the same size, there’s no annoying leftover waste. Any red wine will do; everyone knows that TJ’s 2-buck-chuck is totally passable and is actually $2.49 ;) . You can also use Sanpellegrino Aranciata instead of Orangina. Either way, you’ll have a pitcher of bright, fruity cocktails that give the perfect slow buzz for a BBQ or party.
Elote Salad
BBQ season is here! Warm weather, ice cold drinks, and tons of yummy dishes and sides. I love BBQs because they’re often potlucks, and you get to try out all kinds of new dishes and get inspired by others’ cooking! One of my favorite indulgences is Mexican Grilled Corn, or Elote. Elote is corn on the cob, often served with salt, chili powder, butter, cheese, lime juice, cilantro, cheese, mayonnaise, and sour cream. They’re so delicious and comforting.
I was thinking about ways to make Elote for large groups of people, and realized it would be so easy to simply cut the kernels off the cob and cook the corn in the same way. The result is a vibrant, flavorful side dish that is fantastic for parties or regular ole weeknight dinners. One other perk that I love is that I always tend to get corn stuck in my teeth when I eat it off the cob - and this way, it’s a little easier to eat shovel into your mouth hahah :)
