If you’ve ever been to Hillstone/Houston’s, you’ll know about the unreal grilled artichokes. Huge Globe artichokes seasoned heavily with steak seasoning and charred to perfection. They’re served alongside a delicious remoulade, and are a memorable appetizer.

Growing up, we only ate steamed artichokes with mayonnaise. Our artichokes never graced the piping hot grill or bathed in lemon juice. After having grilled arties at Hillstone all these years, I decided to make them at home. Prepping artichokes is much easier than it looks - follow along for the tastiest artichokes.

Quesadillas are a Perfect Food. Crisp and fluffy at the same time, full of stretchy cheese, and whatever ingredients you’ve got in your fridge at the time. There was a great time period in my life where I routinely kept flour tortillas and shredded cheese in my kitchen so that I could make quesadillas at any moment – but since I also have very little self restraint, I try not to keep them within arm’s reach at all times. Towards the end of summer, fresh corn is widely available and delicious on the grill. This week’s recipe combines sweet charred corn and leftover shredded rotisserie chicken. I love repurposing food from previous meals into something new and quesadillas are the perfect vehicle for that. The Mission Tortillas Street Taco Flour Tortillas are incredible - pillowy and delicious when the edges get hot and toasty. They’re also the perfect size for individual quesadillas. Serve these with the simplest Mango Salsa ever!

I've been making Sweet Potato Mash this way since high school. Some of my favorite recipes come about from a bit of laziness. :) This method really celebrates the sweet potato for all of its natural beauty and can be made while you're making the rest of your meal. Here in my apartment in Hong Kong, I have one induction plate, vs 6 burners at home in the States. This has really changed the way I cook, especially when it comes to timing and the order in which I cook things. It's nice to have the option to prepare a satisfying side dish like this one, in the microwave while I cook something else on the induction plate.

The incredible sweetness of the flesh on its own blows my mind every time. Normally, I just prepare the mashed sweet potato with flaky sea salt and cracked black pepper, but today I'll show you how adding a bit of freshly grated ginger and a dash of cinnamon can elevate this simple side dish to something really special. There's no need to add tons of cream or fancy ingredients when the flavor of the sweet potato is so vibrant on its own.

This is the best broccoli you'll ever eat. Roasting is such a delicious way to prepare veggies, and broccoli absolutely transforms when cooked in a hot oven. They turn golden brown, the stalks turn tender, and their flavor is enhanced. When roasting any vegetables, it's super simple: don't be afraid of oil & salt! Don't skimp, and toss the vegetables so that they're properly coated in oil and seasoning. 

This roasted broccoli really wakes up the taste buds. Flaky sea salt, cracked black pepper, and thinly sliced garlic are the base for great seasoning, but what really brings this broccoli up a notch is the addition of shichimi. Shichimi Togarashi is a Japanese blend of seven spices that varies depending on the region or cook. The typical ingredients include sansho (Sichuan pepper), dried citrus peel, sesame seeds, ginger, garlic, shiso, nori, hemp seeds, and chiles. This mixture is wonderful on meat, noodles, rice, and fried foods. I love adding shichimi to my eggs or on top of my avocado toast!

After the broccoli is roasted, finish it off with a good squeeze of lemon juice and fresh lemon zest for some good brightness and acid. The cake topper is tossing in shaved Parmesan cheese for some nuttiness. This recipe works well for regular weeknight dinners, or as a side for entertaining. There's no need to measure a ton of ingredients - just toss it all together and roast it off in the oven for 15 minutes :)

Ooooh these are little rolls of magic! Lately I've become obsessed with enoki mushrooms. The bouncy texture, how easy they are to cook, and the way they soak up whatever flavors surround them. They are dirt cheap, and you can toss them into virtually any dish. Growing up, I think I've only really eaten enoki mushrooms when I've gone out to eat hot pot with friends. I always enjoyed them, but they were definitely an afterthought. (Hello, beef!) Recently, however, I've been eating enoki with everything - stir fries, soup, noodle dishes, even salads. Their sweet, mellow flavor is so yum. 

I was inspired by these Japanese Beef Enoki Rolls that I had as part of a lunch set the other day, and couldn't get enough of them. They are simple to prepare and the marinade is actually super versatile and can be used for cooking other protein. Beef Enoki Rolls are tender, juicy, and almost taste like beef jerky - a harmonious blend of soy, ginger, garlic, sake, and sesame oil create an incredibly savory marinade for the thinly sliced beef. Soaking the enoki mushrooms in warm, salted water allows them to soften and gain some flavor. Finally all you've got to do is wrap small bundles of mushrooms in the marinaded beef and pan fry. Searing the meat takes a few minutes, and then you're in flavor heaven. Let's get cookin!

I'm going to let you in on one of my tried and true 'recipes', which is totally just a little trick I've been doing since high school whenever I'm really lazy and REALLY hungry. I love chicken wings - and here in Hong Kong, grocery stores sell bags of frozen mid-joint chicken wings. These are my favs - don't get me wrong, I like drumsticks too, but I really love just the wings. In my little HK kitchen, I don't have a proper oven (just a toaster oven). This method of cooking chicken wings on the stove-top is quick, fail-proof, and super flavorful. 

Sometimes you don't have time to go grocery shopping, but you can bet that there'll be some frozen chicken wings in your freezer. You can make these wings with virtually any sauce or marinade that you have in the kitchen, making this the perfect lazy meal! There are simply 2 steps, and 3 ingredients. Simmer the chicken in chicken broth until they're nice and plump (my trick to knowing when they're finished is when the blood clots come out :) and then tossing them in sauce in a skillet.

The flavor of cauliflower is mild, and a bit sweet and creamy - it acts as a canvas for whatever . Roasting this veg is glorious, and let's face it; everything is better with cheese! This recipe is for a really delicious and addicting snack that is as simple as slicing florets of cauli, roasting them for 15-20 minutes, and then adding tons of cheese and fresh parsley. Baking grated Parmesan turns the warm, nutty cheese into salty crisps. These Parmesan Roasted Cauliflower Crisps taste like one of my favorite indulgences - chips. The tender roasted cauliflower is perfectly seasoned, and the baked cheese gives them a nice crust. I could easily polish off a tray of these yummy cauliflower crisps :) Let's get cookin!

Golden brown kernels of corn come together with tomatoes, creamy avocado, red onion for bite, black beans, and tons of fresh cilantro in minutes, and are tossed with the most amazing Honey Lime Vinaigrette. This combo is seriously delicious - the combination of lime juice, earthy, warm cumin, honey, and extra virgin olive oil is the absolute perfect way to bind these ingredients together. Ok, I think we can all agree that everything...everything is better with bacon. Crisp, salty, fatty delicious bacon. BBQ season is here and grilling fruit is definitely one of my favorite ways to celebrate summer. The caramelization of the fruit is really delicious with the flavor of the bacon, and adding a simple reduced balsamic vinegar makes this the easiest appetizer ever. There's something about the texture of orzo pasta that makes me crave it all the time! This Spring salad is great for emptying the fridge - don't have asparagus? Use peas, spinach, or beans! Sub shrimp for salmon or leftover chicken and feel free to use Parmesan instead of Feta :) If you're cutting carbs, toss all these ingredients with crispy Romaine or kale.

The weather is warming up, especially here in Hong Kong. It's 80 degrees in April here! This recipe for Japanese Cold Tofu with Sesame Dressing is quintessential for Spring/Summer. The best part is that this dish requires zero cooking. 

This is one of the best ways to enjoy the beautiful subtle flavor of tofu. Cold tofu can be enjoyed with a ton of different topping choices, including creamy sesame dressing, or a punchy mixture of scallions, fresh ginger, and soy sauce. In this recipe, I'll be using store-bought Japanese sesame dressing. I'll include the recipe for homemade dressing below, but sometimes it's simply easier to go pre-made!

I really wanted to come up with a fun appetizer that involved deliciously tangy cranberries. This dip is unexpectedly tasty. A blend of fresh cranberries, lemon juice, sugar, jalapeño, green onions, cumin, and cilantro is served over softened cream cheese...yes a block of cream cheese! Honestly, what's better than a good dip? All you've gotta do is throw all the ingredients together, let it macerate a bit in the fridge, and pulse it in a blender. The result is a vibrant cranberry relish that is perfectly sweet, tangy, earthy, and with a slight spicy kick. This dip is festive, flavorful, easy on the wallet, and perfect for potlucks. Happy Holidays!! I’m so excited for Thanksgiving - it’s one of my favorite holidays. Today’s recipe is great for potlucks or hosting your own holiday event. Spinach artichoke dip is one of those classics that are just so comforting and indulgent. Best served when piping hot and topped with tons of cheese…I’ve only really had store-bought or dip from a restaurant. I figured it might be nice to whip up a homemade recipe to cut down on unnecessary preservatives/ingredients. Crisp, delicate phyllo dough is spinach and artichoke dip’s bff. Phyllo seems difficult to work with, but actually turned out to be really therapeutic. You can also use pre-made phyllo cups, available in the frozen aisle. I’ll show you how easy it is to make mini phyllo cups filled with this delicious dip! This recipe is as simple as mixing all the ingredients, spooning the dip into phyllo cups, and throwing them in the oven to get warm and golden! Let’s get baking :)

One of my favorite "junk food" indulgences has always been chicken nuggets. The options out there aren't that healthy; most of them are deep-fried, and heavily breaded. Sometimes we don't even know if the nuggets are made of actual chicken! Chicken nuggets are easy to make at home, and with this recipe, I'll show you how you can replace extra breading with yummy quinoa!

Quinoa is actually a seed that is very high in protein, fiber, magnesium, iron, zinc, potassium, and more. It's also gluten free. Quinoa has a sweet, nutty flavor and is delicate in texture. In recent times, it's been known as a substitute, but quinoa is so versatile, it can easily be a main! 

Making Quinoa Crusted Chicken Nuggets is as easy as a 3 step breading process and throwing them in the oven! They're baked, not fried. I love putting a twist on classic junk food by simplifying the ingredients and making them more straightforward. It's important to know what you're putting in your body. Cheese. I think it's safe to say that for some, cheese is its own food group! Cheddar, Gruyere, Jack, Parmesan, Cotija, Brie, Fontina, Feta, Mozzarella...the options are deliciously endless. One of my favorites is Halloumi, which is a semi-soft, brined cheese made from a mixture of goat's and sheep's milk. Because of its high melting point, it can easily be fried or grilled. Grilled cheese.

Halloumi is salty, and really wonderful when paired with mint. It's nice to eat during the warm months. The flavor of the cheese is perfect with fruit like grapes, watermelon, figs, and strawberries. Today's recipe is a surprising mixture of flavors that really play off each other and create a fun dish where spicy meets sweet and salty. This would be beautiful when served at brunch or as an appetizer . The macerated strawberries get a little kick from Serrano pepper, and fresh mint and cilantro top it all off. Let's get cookin :)

I’ve teamed up with the ladies over at MISSBISH for their #MISSDISH series! I’ll be sharing delicious, easy, and healthy recipes on their blog every month :) With that said, it’s officially summer! It’s hella hot outside, and one of my favorite things to make on a hot day is a refreshing Watermelon Feta Salad! Don’t get it twisted, you don’t have to do the crazy grid presentation to enjoy this, but it’s a really fun option for entertaining. This recipe is super easy to throw together and is gorgeous when tossed together in a bowl. There’s something so refreshing about cold, ripe watermelon that’s sprinkled with just a touch of salt, mixed with salty feta, cool cucumber and melon, and creamy avocado. Thin slivers of red onion give the salad a little bite, and fresh mint brings the perfect brightness. A lil drizzle of good balsamic vinegar is all you need to bring it together. Simple, delicious, perfect for summer!

BBQ season is here! Warm weather, ice cold drinks, and tons of yummy dishes and sides. I love BBQs because they’re often potlucks, and you get to try out all kinds of new dishes and get inspired by others’ cooking! One of my favorite indulgences is Mexican Grilled Corn, or Elote. Elote is corn on the cob, often served with salt, chili powder, butter, cheese, lime juice, cilantro, cheese, mayonnaise, and sour cream. They’re so delicious and comforting. 


I was thinking about ways to make Elote for large groups of people, and realized it would be so easy to simply cut the kernels off the cob and cook the corn in the same way. The result is a vibrant, flavorful side dish that is fantastic for parties or regular ole weeknight dinners. One other perk that I love is that I always tend to get corn stuck in my teeth when I eat it off the cob - and this way, it’s a little easier to eat shovel into your mouth hahah :)

Springtime is officially here and I couldn’t be more excited! Tons of fruits and veggies are in season, bringing tons of new possibilities in the kitchen. Whether you are looking for lighter meals or dishes for Easter entertaining, I have an amazing recipe for you. I was really hopeful about this one when I dumped it in the oven - the flavor profiles are perfect together. But when these asparagus bundles came out of the oven; toasty, perfectly salty and tender, wrapped in delicate puff pastry, I was honestly a little overwhelmed. This is one of my favorite things I’ve ever made or blogged. They are unbelievably easy to make, take minimal time to bake up, and are delicious. 
I love asparagus. They are delicious on their own, or roasted with some olive oil, salt, pepper, parmesan, and lemon. But what about wrapping a few tender stalks in salty prosciutto, add a few shavings of nutty Parmesan cheese, and tuck it into a flaky blanket of puff pastry? It’s basically heaven. They are portable, don’t fall apart when eaten, and are gorgeous for entertaining. They’d be perfect for a spring or Easter potluck, and are pretty easy on the wallet if you find well-priced prosciutto, pancetta, or even ham. I’m going to apologize ahead of time for the sheer volume of photos in this post - I couldn’t get enough of how gorgeous they turned out! :) Let’s get cookin!
