Baked Apple Crisp

I love the holidays! Family, friends...fooooood. I am not a person who is shy about going back for a third or fourth helping during the holidays. Food brings people together during these colder months and I couldn't be more happy about that. Coming from a large family, I enjoy every opportunity that brings us all together. And there's something about holiday food that is so comforting - prime rib, sweet potatoes, casseroles, turkey, anything with gravy on top...pies!! Andddd, my mouth is watering. 

I've settled in my first week in Hong Kong and I couldn't be more happy and excited. The people, atmosphere, food, and every day sights and sounds are amazing. But all this holiday talk has got me thinking...I wonder what I'll be having for Thanksgiving this year? :) 

Fruit crisps are heaven–rustic desserts that are the perfect way to show off seasonal fruits. The best part about fruit crisps is that they are simple to make, only needing fruit and few other ingredients. They have a crunchy, buttery, streusel-like topping that gives a nice texture contrast to the soft fruit filling. I thought about how to put a little twist on the classic Apple Crisp. What else makes classic dishes more fun than making them self-contained, individual servings? Top em off with a scoop of good vanilla ice cream, and enjoy the tender, cinnamon-bathed apples and crumbly crisp topping. So for this month's @shopMISSBISH #MISSDISH, I'm going to show you the fast and simple way to a delicious dessert that will impress all your holiday guests. Let's get baking :) 

What You Need: (Yields 4 Apple Crisps):

  • 6 apples - 4 to stuff, 2 for chopping up. I used Fuji apples
  • 1/3 cup brown sugar
  • 1/2 tsp cinnamon
  • 4 tbsp butter

For the crisp topping: 

  • 1/4 cup oats 
  • 1/2 cup flour 
  • 1/3 cup brown sugar
  • 1/2 tsp salt
  • 1/4 cup sugar
  • 1/2 tsp cinnamon
  • 4 tbsp butter, chilled and cut into cubes

Optional:

  • Vanilla ice cream

What To Do:

  • Preheat oven to 400 degrees.
  • Prepare the crumble topping by combining 1/2 cup flour, 1/4 cup oats, 1/3 cup brown sugar, 1/4 cup sugar, 1/2 tsp salt, and 1/2 tsp cinnamon together in a bowl. Whisk together until completely incorporated. 
  • Next we're going to cut in the chilled butter. Use two forks or your hands and mix until the topping is crumbly. 
  • Now for the apples. Peel and chop 2 of the apples. You can chop them into any size you wish. I like to keep the chunks bite-sized. 
  • In a saucepan or skillet over medium heat, sauté the chopped apples, 4 tbsp butter, 1/3 cup brown sugar, and 1/2 tsp cinnamon for about 8-10 minutes. Cook until the apples are tender and remove them from the heat. 
  • With the remaining 4 apples, chop the tops off and use a spoon to scoop out the insides. Be mindful not to nick a whole in the bottom, like I did, or all the glorious sauce will leak out! You don't need to thin out the walls too much, we're just looking for a good bowl shape to stuff.
  • Fill the hollowed apples with the sautéed apple filling, and top them with tons of streusel topping. Bake them for 12-15 minutes or until the streusel is golden and crispy. 
  • Serve them warm with a huge scoop of vanilla ice cream on top! I also like to drizzle extra sauce from the pan, or even caramel sauce over top. 

This is hands down the best way to enjoy an Apple Crisp. I love how every bite is filled with tender apples, crunchy streusel, and creamy vanilla ice cream.
