One Pan Sausage Orecchiette with Broccoli Rabe

One pan meals are a regular at my home - their convenience is unmatched. This week’s recipe comes together in under 20 minutes. A hearty pasta toss that somehow remains light enough for a warm summer night. Little ears of Orecchiette pasta are the perfect shape to cradle juicy morsels of sausage and Parmesan cheese. Tender stalks of broccoli rabe bring some crunch to the party, but can be subbed with anything you have on hand - kale, broccoli, spinach, or even peas. Technically, we do use 2 pans/pots for this dish (a pot to boil the pasta!), but we’ll just keep that to ourselves :)

I love the earthy, warm spice of curry. This week’s recipe satisfies any curry craving while remaining light and summery. Fresh, crisp corn, silky golden Yukon potatoes, plump seared shrimp, and sweet chunks of mango are quickly tossed with curry powder, a splash of coconut milk. This versatile dish can be mixed with your favorite pasta or eaten on its own! There aren’t any exact measurements for this recipe, I love to simply toss things in and adjust to taste.

The first time I ever had Beef Stroganoff was during lunchtime in middle school. I had tried a bite of my friend Ari's lunch and couldn't stop thinking about how delicious it was. You could say that I've been food obsessed since forever, haha :) I love the creamy, robust sauce that's jam-packed with tender mushrooms and beef, and how it clings to al dente egg noodles. It's the ultimate comfort food; the perfect dish to usher in cooler fall nights. This week I've taken the traditional recipe for Beef Stroganoff and made it a little lighter - a Skinny Stroganoff! Instead of using condensed soup and sour cream, we're going with Greek Yogurt. Greek yogurt is an amazing substitute for tons of ingredients when it comes to cooking and baking, and it's a great trick to lighten up heavier dishes.

Pasta salad is perfect for Springtime! This recipe is an easy and delicious way to stretch out fresh seafood. Tender orzo pasta, roasted salmon, cherry tomatoes, asparagus, and salty feta are tossed with a zesty citrus dressing for a beautifully hearty salad. There's something about the texture of orzo pasta that makes me crave it all the time! This Spring salad is great for emptying the fridge - don't have asparagus? Use peas, spinach, or beans! Sub shrimp for salmon or leftover chicken and feel free to use Parmesan instead of Feta :) If you're cutting carbs, toss all these ingredients with crispy Romaine or kale.

This dish is a great way to cool down in the Spring/Summer! Hiyashi Chuka can be made with a variety of toppings, but popular ones include: pickled ginger, cucumbers, ham, shrimp, strips of egg crepes, imitation crab, nori strips, wakame seaweed, and sesame seeds. Some other great ideas are carrots, shredded steamed chicken, and tomatoes! The options are endless, and the dressing is so yummy that it'll pull any combination together. This recipe is super simple - shred and julienne all your toppings, whisk up the dressing, and toss the chilled noodles together. You know how certain foods taste even better when eaten cold? The flavors of the sesame, soy, and rice vinegar dressing bring all the toppings to life :) Let's get cookin!

You can never have enough good pasta dishes in your recipe box :) When you don't have time to simmer a sauce for a couple of hours, it's nice to have a quick 20 minute dish to throw together. You can use any pasta you like - this is wonderful with shells, pappardelle, even angel hair - whatever you've got in the pantry. Alright are you ready to impress everyone in your family, including yourself? Time to make some homemade ravioli! Don’t worry, we aren’t making fresh pasta dough - this is an easy and accessible recipe that will become one of your favorite staples! In keeping with this beautiful warm weather, I’ve kept the filling nice and light for this dish. After devouring all the ravs, I’m definitely going to adapt this recipe and make a heartier fall ravioli in the near future! 

These babies are so simple to throw together. It’s as easy as blending the filling ingredients together, and sandwiching a healthy dollop in between two paper thin wonton wraps. Seal them up and toss them in boiling water for about 3 minutes, and serve it any way you like! Today I’ll show you how to make a brown butter sauce with accents of what else, but bacon :) You can also serve these homemade ravioli in broth for a heartwarming meal. Let’s get cookin! :)

One Skillet Mediterranean Orzo

One-skillet dinners are domestic salvation. Personally, I loathe pre-heating the oven. This dish is done in 15 minutes on the stovetop - easy enough for the guys in your life ;)  I love the idea of not having to boil pasta or wait for dinner to bake up in the oven! Most of my favorite recipes are done in one pan - check out my One-Skillet, No-Bake Lasagna! I love simple tricks that help you cut down on time and save extra steps in the kitchen! :) 
This recipe made me almost cry into my bowl. I’m serious - it’s so good. It’s packed with rich Italian flavors that remind you of your favorite baked pasta dish.
